Ingredients:
Step 1:
Chicken Marinade
• Boneless chicken fillet 1
• Barbecue sauce 1 tbsp
• Sriracha hot chili sauce 1/4 tsp
• Oregano leaves 1/4 tsp
• Garlic powder 1/4 tsp
• Oil 1 tsp
• Salt to taste
• Cooking oil 2-3 tbsp
Step 2: Prepare sauce
• Mayonnaise 1/2 cup
• Basil 1 tsp
• Oregano leaves 1 tsp
• Salt 1/2 tsp
• Black pepper powder 1 tsp
• Dijon mustard 1 tsp
• Olive oil 1 tbsp
Step 3:
To Assemble Pasta
• Boiled pasta 4 cups • Red onion chopped 1/2 cup • Cucumber cubes 1/2 cup • Boiled sweet corns 1/2 cup • Capsicum cubes 2 medium • Black olives 1/2 cup • Fresh parsley 3 tbsp • Mozzarella cheese cubes 1/2 cup • Parmesan cheese 3 tbsp • Grilled chicken • Prepared sauce Directions: Step 1 In bowl, barbecue sauce, sriracha hot chili sauce, oregano leaves, garlic powder, oil, salt, mix well. Marinade chicken fillet for 30 minutes. Heat a grill pan to high heat for 2-3 minutes. Lower the heat to medium-high. Add oil, chicken fillet and cook for 5-6 minutes on each side. Turn off heat and allow chicken fillet to rest in pan for at least 5 minutes before cutting. Set aside. Step 2 In bowl, add mayonnaise, basil, oregano leaves, salt, black pepper powder, dijon mustard, oil oil, mix well. Set aside. Step 3 In bowl, add boiled pasta, red onion, cucumber, boiled sweet corns, capsicum, black olives, fresh parsley, mozzarella cheese, parmesan cheese, grilled chicken prepared sauce, give it a good mix and keep in refrigerate for 6-8 hours and serve.
